This is a very simple and comforting meal. I try to make it with fresh mushrooms if I can and we usually leave out the pimento and green peppers.
I have also included the basic biscuit recipe we use nearly every time we make biscuits.
Chicken A-La-King
1 small can mushrooms
1/2 cup chopped green pepper
1 stick butter
1/2 cup flour
1/2 tsp salt and pepper
2 cups chicken broth
1 pint half and half or milk
1 small can pimento
4 cups diced chicken
Saute mushrooms and green pepper in butter.
Blend in flour, salt, and pepper and let bubble.
Slowly stir in chicken broth and half and half or milk. Bring to a boil over low heat, stirring constantly. Boil 1 minute.
Add chicken and pimento and heat through.
Serve on a biscuit.
Ed's Biscuits
2 cups flour
1 ½ tbsp baking powder
1 tsp salt
¼ cup shortening
¾ cup milk
Mix dry ingredients. Cut in shortening finely and stir in milk. Knead slightly and roll out to about ½ inch thick. Cut out biscuits. Bake on ungreased sheet at 450 degrees for 10-12 minutes.
