Seems like an odd thing to put at the top of this post, but I feel like it should be said. Take what you read here with a grain of salt. Do your own research. Think for yourself. We became convinced to try grinding our own flour, but perhaps you won't come to the same conclusion.

Both Bread Revolution and Whole Grain Breads are written by Peter Reinhart. They were very informative, and though not totally focused on freshly milled flour they did talk about it a bit.

This is such a fun book to read. It is all about local, specialty breads in Europe. I especially found the chapter on rye sourdoughs very interesting. I would love to own this book.

Honestly, I did not find this book to be very helpful. Many of the recipes called for odd, specialty ingredients that we do not buy either because we don't need to or they would be too expensive. It did however have an abundance of gluten free recipes using a variety of alternative flours. If you are gluten free and looking for some new baking recipes, I would definitely give it a try.
